Preparation

  1. Clean the fat meat you might have and cut into more or less steaks. Reserve.
  2. In a pan with a little oil put the white part of the chopped leek, add a little salt and sauté for about 8 minutes.
  3. Pour the wine and let reduce 5 minutes.
  4. Add the jam, mix well and if necessary let reduce a little more. Grind the sauce.
  5. On a hot griddle brown the meat, season and serve accompanied by the sauce.
  6. Add color with a little parsley.
